What is it?
What is refresco de cacao?
A cold, creamy Nicaraguan drink made with toasted cacao, rice, cinnamon and milk. Think cold horchata made with cacao.
We toast the cacao, grind it in the mill, cook it with milk, strain it and serve it very cold. It is thick, not cacao-flavored water.
The jícaro tree gives the dried fruit that becomes the jícara, the traditional cup. Its seed is flat, paper-thin and about the size of a lentil. We toast it and grind it to make a second traditional drink, also served cold.
